Smoked Herring and Tomatoes on Crackers
A delicious summer appetizer not for the faint of heart, this snack balances several strong flavors.
Servings: 2
- 10 rice crackers
- ΒΌ cup garlic spread (see note)
- 1 large, very ripe tomato, preferably heirloom, sliced thick and cut into bite-sized pieces
- 1 6-ounce tin smoked herring, packed in oil
- 2 ounces fresh basil
I got my garlic spread at Trader Joe's, from the dip section. But it's simple to make your own. I found that the spread is very similar to a traditional Lebanese spread called toum. Bon Appetit has a great recipe for it.
