Smoked Herring and Tomatoes on Crackers

A delicious summer appetizer not for the faint of heart, this snack balances several strong flavors.

  • 10 rice crackers
  • ΒΌ cup garlic spread (see note)
  • 1 large, very ripe tomato, preferably heirloom, sliced thick and cut into bite-sized pieces
  • 1 6-ounce tin smoked herring, packed in oil
  • 2 ounces fresh basil


  • Assemble your snacks: Give each cracker a generous swipe of garlic spread, followed by a tomato slice, a piece of herring and a basil leaf. Enjoy!


I got my garlic spread at Trader Joe's, from the dip section. But it's simple to make your own. I found that the spread is very similar to a traditional Lebanese spread called toum. Bon Appetit has a great recipe for it.
